Cayuse Vineyards' "Cailloux" Syrah comes from the Walla Walla Valley in Washington, where the 2021 vintage was co-fermented with a small portion of Viognier and aged in French oak. The grapes were farmed biodynamically, with a significant percentage whole-cluster fermented to preserve aromatic intensity.

The wine opens with a floral, mineral-driven nose, violets, white pepper, black tea, crushed olives, and wet earth layering over hints of blood orange and baked spice. On the palate, it's sleek and focused, with juicy black fruits and briny, umami-tinged undertones that recall smoked sea salt and soy. The tannins are fine-grained and silken rather than aggressive, allowing an herbaceous, savory depth to emerge alongside peppery spice and a mineral saltiness that carries through to a pleasantly bitter finish. What an aromatic nose of violets, peppercorns, olives, green plums, wet earth and ash. Touch of peaches on the palate, which is sleek, with focused tannins and long, powerful and peppery layers. Medium- to full-bodied and continuous. Syrah co-fermented with about 5% viognier. The syrah is around 70% whole-cluster fermented. From biodynamically grown grapes. Drink now or hold.
