Cayuse Vineyards' 2021 Cailloux Vineyard Syrah is a Washington red from Walla Walla Valley, made from 97 percent Syrah co-fermented with 3 percent Viognier and grown using biodynamic methods. The wine spent 18 months in French oak, with a portion of the fruit whole-cluster fermented to add textural depth.
The nose opens with floral notes, black pepper, violets, and crushed olives alongside earthy minerality and hints of black tea. On the palate, this is a wine of refinement and restraint: silken textures and fine-grained tannins frame a core of black fruits with saline, briny undertones and a savory herbaceous spine. Meaty and umami-driven elements emerge alongside white pepper and a touch of roasted nori character, all in service of an elegant, contemplative whole. The finish is mineral-forward with a pleasant bitter edge and impressive length. This is a food-friendly wine ready to enjoy now, though it will age gracefully.
