Chardonnay from Chablis speaks in a cooler register than it does almost anywhere else, trading tropical ripeness for citrus, minerality, and a lean, mouthwatering line of acidity. This bottling from Christian Moreau Pere & Fils comes from Vaillon, one of the premier cru climats on the left bank of the Serein, and the 2023 vintage gives you a still, unoaked or lightly handled white built for the table. Expect the taut, stony precision Chablis is known for, carried with a little more depth and texture than a village wine would offer.

This a crisp Vaillon showing good substance and aromas of crushed seashells, limes, minerals and a touch of lemongrass. Saline palate with a medium body and a solid, salty finish. Creamy texture. Drink now or hold. (James Suckling, May 2026)
The 2023 Chablis Vaillon 1er Cru, which did not complete malolactic fermentation to retain acidity, has a vivacious, flinty nose that leaps from the glass. The palate is well balanced with a steely opening. Seductive lemon thyme and orange pith notes come through on the mid-palate, with a dab of ginger that enlivens the finish. The 2023 is very fine. (Vinous, June 2025)
