Amontillado occupies a middle ground in the world of Sherry, beginning its life under a protective veil of flor yeast before that layer fades and the wine continues aging in contact with air. This dry example comes from Lustau's Los Arcos solera in Andalucia, made from Palomino, the white grape behind most of the region's fortified wines. The solera method blends younger and older wines across stacked barrels, so the bottling carries no single vintage.
