Gilbert Picq et ses Fils makes this Chablis from two parcels planted in the early 1970s. The 2023 Dessus la Carrière spent a full year in barrel on its lees, with fermentation itself drawn out over twelve months, a patient approach that builds complexity into the finished wine.
The bouquet is mineral-driven and tightly focused, with a saline quality that runs through to the finish. On the palate the wine shows a precise, poised character with briny tension and a hint of iodine that speaks to Chablis's stony terroir. Underneath that mineral spine sit ripe stone fruit notes, lemon confit, and oceanic hints of oyster shell and warm stone. The acidity is bright and mouthwatering, holding the wine's medium- to full-bodied frame together with a crisp core of fruit that carries into a lingering saline finish. This is a wine built to age, but drinks beautifully now.

The 2023 Chablis Au Dessus des Carrières was bottled a couple of weeks prior to my visit after 12 months on the lees and a fermentation that was strung out over 12 months! It has an exquisite, beautifully defined and focused bouquet surfeit with minerals. The palate is very precise, poised, saline and tangy, with a dab of iodine toward the finish. The 2023 is excellent.
A standout performer, Picq’s 2023 Chablis Dessus la Carrière, sourced from two parcels planted between 1970 and 1973, unfurls in the glass with oceanic notes of oyster shell and warm stones mingled with lemon confit, peach and pear. On the palate, it is medium- to full-bodied and concentrated yet tensile, laden with mouthwatering acidity and with a crisp core of fruit, before concluding in a long, saline finish. It merits purchase by the case.
