New York State bourbon from the Hudson Valley, Hillrock Double Cask is made by a producer who grows their own grain on-site, malts it in-house, and takes a farm-to-bottle approach unusual in American whiskey. The spirit spends five years in new charred oak, then finishes in ex-bourbon casks, adding another layer of oak influence and complexity to the foundation.
