A traditional-method sparkler born of an unusual ambition, this is a Rioja producer's Cava, made by Muga from 85% Viura and 15% Chardonnay in the 2021 vintage. The base wine fermented in oak vats before its second fermentation in bottle, then rested on the lees for at least two years, the length that gives Cava its bready depth and fine texture. Classed as a Brut Reserva, it finishes dry, with just a whisper of residual sugar and enough acidity to keep everything taut.
The bubbles are small and persistent, driving a creamy mousse that feels closer to French sparkling than the bracing style Cava can sometimes take. Baked apple and lime zest lead, wrapped in yeasty, pastry-like notes with soft herbs and a cool touch of mint. It reads young and expressive, clean and lifted, with refined acidity carrying it to a dry close. Drinking beautifully now, though it has the structure to hold and develop for years.

With the hopes of one day making a sparkling wine in Rioja, the 2021 Conde De Haro Reserva Blanco is a Brut Reserva Metodo Tradicional made from 85% Viura and 15% Chardonnay. It tastes like a French style-sparkling with small, fine-tuned bubbles, having undergone a second fermentation and aging on its lees for at least 24 months on the lees. The creamy mousse is complemented by refined acidity, and it’s drinking gorgeously now, with aging potential of 10-12 years. (Jeb Dunnuck, July 2025)
The sparkling white 2021 Conde de Haro was produced with a blend of Viura and Chardonnay and still sold under the Cava appellation even though Rioja now allows sparkling wines too. It fermented in oak vats, where the wine was kept until the end of April following the harvest, and then put to referment in bottle, where the wine matured with lees for no less than 24 months. It has 12% alcohol, a pH of 3.09, 5.93 grams of acidity and two grams of residual sugar. They harvested the Chardonnay in September, something quite unusual, as it was a later harvest with a longer cycle and full development of aromas and flavors in the grapes. The wine is clean and expressive, quite young and subtle. It's tasty, has abundant, small bubbles and a dry finish. 60,000 bottles produced. It was disgorged in March 2024. The 2021 Brut Reserva Cava Conde de Haro is a traditional-method sparkling wine made from Viura and Chardonnay. Aromas of baked apple, soft herbs, yeast and delicate pastry are lifted by lime zest and a subtle mint note, while the dry, broad, slightly coarse mousse has attractive freshness.
