Aglianico is Campania's dark, structured red grape, and this bottling from San Salvatore, labeled under the Paestum IGP, shows it in a comparatively approachable mode. The 2021 vintage carries the varietal's natural spine but wears it lightly, a wine built for the table rather than the cellar's distant future.
The nose smolders, musky black currant and mentholated herbs threaded with a whiff of burning embers. On the palate it turns silken and pliant, with dark cherry and plum, a bitter cacao edge, and a saline mineral streak that keeps everything taut. A lift of acidity carries the finish long and fresh as notes of licorice fade, and the tannins stay tame throughout. Pour it alongside grilled meats or pork sausages.
The hauntingly dark 2021 Aglianico Jungano smolders up from the glass, with musky black currants mingling with mentholated herbs and a tinge of burning embers. Silken and pliant, it reveals a tension-building core of tart red and black fruits, salty mineral tones and citrus. The San Salvatore 1988 2021 Aglianico Jungano shows textural softness that gives this expression of Aglianico a charming and ultimately more accessible side. Dark cherry, plum and hints of bitter chocolate appear over a medium-plus finish. That cacao-like bitterness is also found on the close, although the tannins are tame.
