SotoMayor Sotol (750ml) *

Sotol is a spirit distilled from the sotol plant, a desert succulent native to northern Mexico, and this expression comes from Sotomayor in Chihuahua. Like mezcal and tequila, sotol carries the funky, herbaceous character of its agave-family source, but with its own mineral edge and subtle sweetness drawn from the high desert terroir where the plants grow.

Expect dry, grassy notes with a peppery finish and an underlying earthiness that reflects both the plant and the limestone-rich soils of the region. This works well neat or in a cocktail where you want a spirit with real botanical backbone, something that stands up to citrus and spice rather than disappearing into sweetness.
