Brut Nature means no dosage, no sugar added after disgorgement, so a Cava made this way has nowhere to hide. This is the Claror Gran Reserva from Vins El Cep, a bottle-fermented sparkling wine from Cava with the extended lees aging that the Gran Reserva designation requires. The 2016 vintage carries real bottle age, and the traditional method (secondary fermentation in the bottle) gives it the fine, driven bead you would expect.
Expect a wine that has moved past simple fruit into something more layered: pastry and brioche, a nutty, faintly sherried edge, baked apple alongside brighter citrus and tangerine. The mousse arrives full and enveloping, the texture leans chalky, and the finish stays dry, saline, and long. There is floral lift and a lees-driven depth here that makes it read as a serious sparkling wine rather than an aperitif afterthought.
